Nutrition
In the most affluent country in
the world, millions of people are
nutritionally bankrupt. Even if
you can afford the very best, you may have a poor diet -- overloaded
with animal protein and too high in nutritionally empty fats, sugars, and
alcohol. Of the calories in the typical American diet, 60 percent come
from fat and added sugars; that means we must get 100 percent of the
f0rty-four nutrients essential to life from just 40 percent of our calorie in-
take.
There is mounting evidence that this distorted diet, which is also
too high in salt and cholesterol, underlies many of the nation s leading
killing and crippling diseases, including heart attack, cancer of the colon
and breast, high blood pressure, diabetes, osteoporosis, kidney and liver
disease.
Eighty million Americans -- 40 pecent of the population -- are
overweight by twenty pounds or more. But instead of adopting a long-
lasting, nutritionally sound solution to their weight problem, most grasp
at health-damaging straws -- fad diets and reducing drugs that nearly al-
ways fail in the long run and doom their devotees to a lifetime ride on
the weight-gain seesaw.
Most of us have moved far from the simple menus of yore based on
readily recognizable elements of the Basic Four -- grains, fruits and
vegetables, milk and milk products, and animal and vegetable protein.
More than half the food we eat today is processed, and most consumers
know tittle of its nutritional virtues and shortcomings. We have also
moved far from the menu Homo sapiens evolved on: a diet rich in com-
plex carbohydrates and fiber (from starchy food, vegetables, and fruits)
and low in animal protein. The high-meat, high-sweet, low-fiber diet we
currently eat is overtaxing our metabolic abilities and undermining our
health.
Since bad eating habits usually do not take their toll until years
later, you may not be sufficiently motivated to make the needed adjust-
ments. The following section is intended to help you get and stay on the
right nutritional track. No matter how long you ve been eating
improperly, it s never too late to benefit from a change for the better.
