Even if you are perfectly healthy, a radical,<br >abrupt change in your diet is un wise without first consulting your physi-<br >cian.<br > A certain amount of redundancy has been built into the book.<br >Since many topics in nutrition are closely interrelated and since many<br >readers are likely to refer to individ~!al chapters from time to time,<br >particular points have been made wherever they happen to be relevant.<br >And in many cases, the reader is referred to other chapters for ex-<br >panded discussions of certain points. For example, while animal fats are<br >discussed primarily in the chapter on fats and cholesterol, they are also<br >mentioned in the chapters on protein and vegetarian diets.<br > The chapters in this book have been read for technical accuracy<br >by area specialists (see acknowledgments). From time<br >to time, new findings will change our understanding and the nutritional<br >guidance derived from it. For now, however, we all have to eat.
