Snow Peas in<br > i<br > Basl Butter<br >SERVES 4<br >1 lb snow peas, trimmed<br >salt<br >1/4 cup butter or margarine,<br > softened<br >I teaspoon dried basil<br >1/2 teaspoon grated orange peel<br >pepper<br >2 slices of orange, to garnish<br >1 Bring a saucepan of salted water<br >to a boil, add the snow peas and<br >bring back to a boil. Reduce the<br >heat, cover and simmer for about<br >5 minutes until just tender, but<br >still crisp (see Watchpoint).<br >2 Meanwhile, beat the butter in a<br >small bowl with the basil, orange<br >peel and a little pepper. Mix until<br >well blended.<br >3 Drain the snow peas thoroughly<br >in a colander, then return to the<br >pan. Add the butter mixture and<br >toss gently over low heat until<br >snow peas are thoroughly coated.<br >4 Transfer the snow peas to a<br >serving dish, garnish with slices of<br >orange twisted decoratively and<br >serve at once.<br >
